He says: Pretty high price for a single glass, and the markup doesn’t help things. However, this is a solid glass of Chablis, and something you may not see on many wine lists in the city. It wasn’t my absolute favorite style, as the 12-months of “aging on the lees” (yeast cells which have died after fermentation is complete) adds a lot of toast that tend to stand out, masking the acidic crispness one would expect. However, the pedigree is evident, and the butteriness on the palate makes it worth a try.

She says: It was a bubbly kind of night… what more can I say?  The Crémant de Bourgogne wooed me! Although I am known to be a sucker for a good Chablis too, on this occasion I wanted to just sit and savour my bubbly.
